Vegetarian Shepherds Pie

Ingredients of Vegetarian Shepherds Pie

For the Filling:

2 tablespoons olive oil
1 large onion, finely chopped
3 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 red bell pepper, diced
1 cup mushrooms, chopped
1 zucchini, diced
1 cup frozen peas
1 can (15 oz) lentils, drained and rinsed (or 1.5 cups cooked lentils)
2 tablespoons tomato paste
1 tablespoon soy sauce or tamari
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1/2 teaspoon ground black pepper
Salt to taste


For the Mashed Potato Topping:

4 large potatoes, peeled and cubed
1/4 cup milk (or plant-based milk)
2 tablespoons butter (or vegan butter)
Salt and pepper to taste

Instructions for making Vegetarian Shepherds Pie:

Prepare the Mashed Potatoes:

Place the peeled and cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes.
Drain the potatoes and return them to the pot. Mash with butter and milk until smooth and creamy. Season with salt and pepper. Set aside.


Cook the Filling:

Heat olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots, celery, and red bell pepper to the skillet. Cook for another 5 minutes until the vegetables start to soften.
Stir in the mushrooms and zucchini, cooking until tender, about 5 minutes.
Mix in the tomato paste, soy sauce, thyme, rosemary, paprika, black pepper, and salt. Cook for 2 minutes.
Add the lentils and frozen peas. Stir well and cook for another 5 minutes until heated through.


Assemble the Pie:

Preheat your oven to 400°F (200°C).
Transfer the vegetable mixture to a baking dish (about 9×13 inches).
Spread the mashed potatoes evenly over the top of the vegetable mixture, smoothing with a spatula.
Use a fork to create a pattern on the mashed potatoes for a bit of texture.


Bake:

Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the filling is bubbling around the edges.


Serve:

Let the Shepherd’s Pie cool for a few minutes before serving. Enjoy warm!
