Vegetarian Lasagna

Ingredients of Vegetarian Lasagna:

9 lasagna noodles
2 cups marinara sauce
2 cups ricotta cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 egg
2 cups chopped spinach
1 cup sliced mushrooms
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and black pepper, to taste
Fresh basil leaves, for garnish

Instructions for making Vegetarian Lasagna:

Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil.
Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.
Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-6 minutes.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt, black pepper, dried oregano, and dried basil. Remove from heat and set aside.
In a mixing bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, and egg. Mix well until smooth and well combined.
To assemble the lasagna, spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
Place 3 lasagna noodles on top of the sauce, overlapping slightly. Spread half of the ricotta cheese mixture over the noodles.
Spoon half of the mushroom and spinach mixture evenly over the ricotta cheese layer.
Repeat the layers with marinara sauce, lasagna noodles, remaining ricotta cheese mixture, and remaining mushroom and spinach mixture.
Top the lasagna with another layer of marinara sauce and sprinkle with additional shredded mozzarella and grated Parmesan cheese.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is melted and bubbly.
Remove the lasagna from the oven and let it rest for 10 minutes before slicing.
Garnish with fresh basil leaves before serving.
