Ingredients of Vegetable and Tofu Kebabs
1 block of firm tofu, drained and cubed
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 small zucchini, sliced
1 red onion, cut into chunks
8-10 cherry tomatoes
2 tablespoons olive oil
3 tablespoons soy sauce
2 tablespoons balsamic vinegar
2 tablespoons honey or maple syrup
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and black pepper to taste
Fresh parsley or cilantro for garnish
Instructions for making Vegetable and Tofu Kebabs:
Prepare the Marinade: In a bowl, whisk together the olive oil, soy sauce, balsamic vinegar, honey (or maple syrup), minced garlic, ground cumin, smoked paprika, dried oregano, salt, and black pepper.
Marinate the Tofu: Place the cubed tofu in a separate bowl or resealable plastic bag and pour half of the marinade over it. Let it marinate for at least 30 minutes, or preferably overnight in the refrigerator for maximum flavor.
Prepare the Vegetables: While the tofu is marinating, prepare the vegetables. Cut the bell peppers, zucchini, red onion, and cherry tomatoes as instructed.
Assemble the Kebabs: Preheat your grill or grill pan to medium-high heat. Thread the marinated tofu cubes and vegetables onto skewers, alternating between tofu and veggies.
Grill the Kebabs: Brush the kebabs with the remaining marinade and grill them for 10-15 minutes, turning occasionally, until the tofu is golden and the vegetables are tender and slightly charred.
Serve: Remove the kebabs from the grill and garnish with fresh parsley or cilantro. Serve hot with a side of rice, couscous, or a fresh salad.
Tips:
For extra flavor, soak wooden skewers in water for 30 minutes before using to prevent burning.
You can use a mix of your favorite vegetables or add mushrooms for variety.
