2 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar
1 vanilla bean (or 1 teaspoon vanilla extract)
2 1/2 teaspoons unflavored gelatin
3 tablespoons cold water

Instructions for making Vanilla Panna Cotta:
Prepare the Gelatin: In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom, allowing the gelatin to absorb the water and soften.
Heat the Cream and Milk: In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. If using a vanilla bean, split it lengthwise and scrape out the seeds, adding both the seeds and the pod to the saucepan. If using vanilla extract, you’ll add it later.
Dissolve the Sugar: Place the saucepan over medium heat and cook, stirring occasionally, until the sugar dissolves and the mixture is just about to simmer. Do not let it boil.
Add the Gelatin: Remove the saucepan from the heat. Stir in the gelatin mixture until fully dissolved. If using vanilla extract instead of a vanilla bean, stir it in now.
Strain the Mixture: Remove the vanilla bean pod if you used it. Pour the mixture through a fine mesh sieve into a large measuring cup or bowl with a spout. This will ensure a smooth texture by removing any undissolved gelatin or vanilla bean bits.
Pour into Molds: Carefully pour the mixture into individual serving molds, ramekins, or glasses. Allow them to cool slightly at room temperature before covering them with plastic wrap and refrigerating.
Chill: Refrigerate the panna cotta for at least 4 hours or until set. The texture should be firm yet jiggly.
Serve: To unmold, gently run a knife around the edges of the panna cotta, then dip the bottom of each mold briefly in warm water to loosen it. Invert onto serving plates. Alternatively, you can serve it directly in the molds or glasses.
Garnish and Enjoy: Top with fresh berries and a sprig of mint, if desired, before serving.
