Ingredients of Strawberry Shortcake

For the Shortcakes:

2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt

2/3 cup whole milk

1 pound fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tablespoon lemon juice

1 cup heavy whipping cream, chilled
2 tablespoons powdered sugar
1 teaspoon vanilla extract

Instructions for making Strawberry Shortcake:

Prepare the Strawberries:

In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Stir well to coat the strawberries and allow them to macerate while you prepare the shortcakes.

Make the Shortcakes:

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Add the chilled butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
Pour in the milk and vanilla extract. Stir until just combined; do not overmix.
Turn the dough onto a lightly floured surface and gently knead a few times until it comes together. Pat the dough into a 1-inch thick round.

Make the Whipped Cream:

In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to over-whip.

Slice each shortcake in half horizontally. Place the bottom half on a plate, spoon a generous amount of strawberries over it, and top with whipped cream.
Place the top half of the shortcake over the whipped cream, and add another dollop of whipped cream and a few more strawberries if desired.
