Ingredients of Spicy Fish Stew

1 lb (450g) white fish fillets (such as cod, haddock, or tilapia), cut into bite-sized pieces
2 tablespoons olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 jalapeño pepper, seeds removed and minced
1 can (14 oz/400g) diced tomatoes
2 cups (480ml) fish or vegetable broth
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and pepper, to taste
Juice of 1 lime
Fresh cilantro, chopped, for garnish
Lime wedges, for serving

Instructions for making Spicy Fish Stew:

Saute the Vegetables: Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Add the garlic, red and yellow bell peppers, and jalapeño. Cook for another 4-5 minutes until the peppers are tender.

Add the Spices: Stir in the smoked paprika, ground cumin, and cayenne pepper. Cook for 1-2 minutes, allowing the spices to release their aroma.

Simmer the Stew: Add the diced tomatoes and fish or vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low. Let the stew simmer for 10-15 minutes, allowing the flavors to meld together.

Cook the Fish: Gently add the fish pieces to the pot. Simmer for 5-7 minutes, or until the fish is cooked through and flakes easily with a fork. Be careful not to overcook the fish.

Season and Serve: Stir in the lime juice and season the stew with salt and pepper to taste. Ladle the spicy fish stew into bowls, garnish with fresh cilantro, and serve with lime wedges on the side.
