Ingredients of Spaghetti Squash with Marinara Sauce
1 medium spaghetti squash
2 tablespoons olive oil
Salt and pepper, to taste
1 jar (24 oz) marinara sauce (or homemade)
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Fresh basil leaves, for garnish
Grated Parmesan cheese, for serving (optional)
Instructions for making Spaghetti Squash with Marinara Sauce:
Prepare the Spaghetti Squash:
Preheat your oven to 400°F (200°C).
Cut the spaghetti squash in half lengthwise and scoop out the seeds.
Drizzle the inside of each squash half with olive oil and season with salt and pepper.
Place the squash halves cut-side down on a baking sheet lined with parchment paper.
Roast in the preheated oven for 40-45 minutes, or until the squash is tender and easily pierced with a fork.
Cook the Marinara Sauce:
While the squash is roasting, heat a tablespoon of olive oil in a medium saucepan over medium heat.
Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Pour in the marinara sauce and stir in the dried oregano and basil.
Lower the heat and let the sauce simmer for about 10-15 minutes, stirring occasionally.
Shred the Spaghetti Squash:
Once the squash is cooked, remove it from the oven and let it cool slightly.
Using a fork, scrape the inside of each squash half to create spaghetti-like strands.
Transfer the spaghetti squash strands to a serving bowl.
Combine and Serve:
Pour the marinara sauce over the spaghetti squash and toss gently to combine.
Garnish with fresh basil leaves and, if desired, sprinkle with grated Parmesan cheese.
