1 lb ground beef or lamb
1 onion, finely chopped
2 carrots, diced

Instructions for making Shepherds Pie:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Cook the Meat: In a large skillet, cook the ground beef or lamb over medium heat until browned. Drain any excess fat. Add the chopped onion, carrots, and garlic to the skillet and sauté until the vegetables are soft, about 5 minutes.
Add the Sauce: Stir in the tomato paste, Worcestershire sauce, and beef broth. Bring the mixture to a simmer and cook for about 10 minutes, until the sauce has thickened slightly. Add the peas and cook for another 2 minutes. Season with salt and pepper to taste.
Assemble the Pie: Transfer the meat and vegetable mixture to a baking dish, spreading it evenly. Spoon the mashed potatoes over the top, spreading them out to cover the filling completely. If using, sprinkle the shredded cheddar cheese over the top.
Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, until the top is golden and the filling is bubbling around the edges.
Garnish and Serve: Remove the Shepherd’s Pie from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
