Ingredients of Pasta Salad
2 cups of cooked and cooled fusilli or penne pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
Dressing:
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 garlic clove, minced
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions for making Pasta Salad:
In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, feta cheese, parsley, and basil.
