Ingredients of New York Cheesecake
Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
Cheesecake Filling:
4 (8-ounce) packages cream cheese, softened
1 ¼ cups granulated sugar
1 teaspoon vanilla extract
4 large eggs
2/3 cup sour cream
2/3 cup heavy cream
Instructions for making:
Preheat the Oven:
Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or non-stick spray.
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter.
Mix until the crumbs are evenly coated with butter.
Press the mixture evenly into the bottom of the prepared springform pan.
Bake for 10 minutes, then remove and set aside to cool.
Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Gradually add the sugar, beating until well combined.
Add the vanilla extract and mix until incorporated.
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
Mix in the sour cream and heavy cream, blending until the filling is smooth and creamy.
Bake the Cheesecake:
Pour the cheesecake filling over the cooled crust in the springform pan.
Smooth the top with a spatula.
Place the springform pan into a larger baking pan and pour hot water into the larger pan until it reaches halfway up the sides of the springform pan (this is a water bath to prevent cracking).
Bake for 1 hour and 15 minutes, or until the center is set but still slightly jiggly.
Turn off the oven, slightly crack the oven door, and let the cheesecake cool in the oven for 1 hour.
Cool and Serve:
After the cheesecake has cooled in the oven, remove it and allow it to cool to room temperature.
Refrigerate for at least 4 hours or overnight before serving.
Optional Toppings:
