Ingredients of Mini Quiches
1 sheet of store-bought puff pastry
4 large eggs
½ cup milk or heavy cream
½ cup shredded cheddar cheese
¼ cup finely chopped onion
¼ cup diced bell peppers (any color)
¼ cup chopped spinach
¼ cup cooked and crumbled bacon (optional)
Salt and pepper to taste
1 teaspoon dried herbs (such as thyme or oregano)
Instructions for making:
Preheat the Oven: Start by preheating your oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray or butter.
Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface. Cut the pastry into small squares large enough to fit into the muffin cups. Gently press each square into the muffin tin, making sure the edges come up to form a crust.
Prepare the Filling: In a medium bowl, whisk together the eggs, milk or cream, salt, pepper, and dried herbs. Stir in the shredded cheese, chopped onions, bell peppers, spinach, and bacon if using.
Assemble the Quiches: Pour the egg mixture into each puff pastry cup, filling them about 3/4 of the way. Be careful not to overfill, as the quiches will puff up while baking.
Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the quiches are golden brown and set in the middle. A toothpick inserted into the center should come out clean.
Cool and Serve: Allow the mini quiches to cool slightly in the pan before removing them. Serve warm or at room temperature.
