Grilled Vegetable Quesadillas:

2 large flour tortillas
1 cup shredded cheddar cheese (or your preferred cheese)
1 bell pepper, sliced
1 zucchini, sliced
1 red onion, sliced
1 cup sliced mushrooms
1 tablespoon olive oil
Salt and pepper to taste
Optional: avocado slices, salsa, sour cream, cilantro for serving

Instructions for making Grilled Vegetable Quesadillas:

Preheat your grill or grill pan over medium heat.
In a bowl, toss the sliced bell pepper, zucchini, red onion, and mushrooms with olive oil, salt, and pepper.
Grill the vegetables on the preheated grill until they are tender and have grill marks, about 5-7 minutes per side. Remove from the grill and set aside.
Place one tortilla on a flat surface. Sprinkle half of the shredded cheese evenly over the tortilla.
Arrange the grilled vegetables over the cheese, spreading them out evenly.
Sprinkle the remaining cheese on top of the vegetables.
Place the second tortilla on top to cover the filling, pressing down gently.
Carefully transfer the quesadilla to the grill or grill pan. Cook for 2-3 minutes per side, or until the tortilla is crispy and the cheese is melted.
Remove the quesadilla from the grill and let it cool for a minute before slicing into wedges.
Serve the grilled vegetable quesadillas hot with optional toppings like avocado slices, salsa, sour cream, and fresh cilantro.
