Ingredients of Kale and Quinoa Patties

1 cup quinoa, rinsed
2 cups water
1 bunch kale, stems removed and finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
2 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
Olive oil for cooking

Instructions for making Kale and Quinoa Patties:

Cook the Quinoa:

In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat, cover, and simmer for about 15 minutes, or until the water is absorbed and the quinoa is fluffy. Let it cool slightly.


Prepare the Kale:

While the quinoa is cooking, heat a little olive oil in a skillet over medium heat. Add the chopped kale and sauté for 3-4 minutes until it wilts. Remove from heat and set aside.


Mix the Patties:

In a large bowl, combine the cooked quinoa, sautéed kale, chopped onion, minced garlic, breadcrumbs, Parmesan cheese, eggs, salt, pepper, and paprika. Mix well until all the ingredients are evenly combined.


Form the Patties:

Scoop out about 1/4 cup of the mixture and shape it into a patty with your hands. Repeat with the remaining mixture.


Cook the Patties:

Heat a tablespoon of olive oil in a large skillet over medium heat. Cook the patties in batches, about 3-4 minutes per side, until they are golden brown and crispy on the outside.


Serve:

Serve the patties warm with your favorite dipping sauce or as a side dish with a fresh salad.
