Cauliflower Rice Stir-Fry

Ingredients of Cauliflower Rice Stir-Fry

1 medium head of cauliflower, grated into rice-sized pieces
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 bell pepper, diced
1 cup snap peas, trimmed and halved
1 cup carrots, shredded
1 cup broccoli florets, chopped
2 eggs, lightly beaten
3 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon sesame oil
2 green onions, sliced
1 tablespoon sesame seeds (optional)
Salt and pepper to taste

Instructions for making Cauliflower Rice Stir-Fry:

Prepare the Cauliflower Rice:

Remove the leaves and core from the cauliflower.
Use a food processor to pulse the cauliflower into small, rice-sized pieces, or grate it using a box grater. Set aside.


Cook the Vegetables:

Heat olive oil in a large skillet or wok over medium-high heat.
Add the chopped onion and minced garlic, and sauté until fragrant and translucent, about 2-3 minutes.
Add the bell pepper, snap peas, shredded carrots, and broccoli florets to the skillet. Stir-fry the vegetables for 5-7 minutes, or until they are tender but still crisp.


Cook the Cauliflower Rice:

Push the vegetables to the side of the skillet and pour the lightly beaten eggs into the empty space.
Scramble the eggs until fully cooked, then mix them with the vegetables.
Add the cauliflower rice to the skillet, stirring well to combine.


Season and Finish:

Pour the soy sauce and sesame oil over the cauliflower rice mixture.
Stir-fry everything together for another 5 minutes, or until the cauliflower rice is tender.
Season with salt and pepper to taste.


Garnish and Serve:

Remove the skillet from heat and stir in the sliced green onions.
Sprinkle sesame seeds on top if desired.
