Beef Stew

Ingredients of Beef Stew Recipe:

1.5 pounds stewing beef, cut into cubes
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
3 carrots, peeled and sliced
3 potatoes, peeled and cubed
2 cups beef broth
1 cup red wine (optional)
1 can (14.5 ounces) diced tomatoes
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons all-purpose flour (optional, for thickening)
Chopped fresh parsley for garnish (optional)

Instructions for making Beef Stew:

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef and brown on all sides. Remove the beef from the pot and set it aside.
In the same pot, add the chopped onion and garlic. Cook until softened and fragrant, about 3-4 minutes.
Add the carrots and potatoes to the pot. Stir and cook for another 2-3 minutes.
Return the browned beef to the pot. Pour in the beef broth and red wine (if using). Add the diced tomatoes (with their juices), bay leaves, dried thyme, salt, and pepper. Stir to combine.
Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
If you prefer a thicker stew, you can mix 2 tablespoons of flour with a little water to create a slurry. Stir this into the stew during the last 15 minutes of cooking to thicken the sauce.
Once the stew is ready, remove the bay leaves. Taste and adjust the seasoning if needed.
Serve the beef stew hot, garnished with chopped fresh parsley if desired. Enjoy with crusty bread or over cooked rice.
