Chicken Tikka Masala

Ingredients of Chicken Tikka Masala:

500g boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1 cup plain yogurt
3 tablespoons vegetable oil
1 large onion, finely chopped
3 cloves garlic, minced
1-inch piece of ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon turmeric
1 teaspoon garam masala
1/2 teaspoon cayenne pepper (adjust to taste for spice level)
1 can (14 oz) diced tomatoes
1 cup heavy cream
Salt to taste
Fresh cilantro leaves, chopped (for garnish)

Marinade:

1 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon ground cinnamon
1 teaspoon cayenne pepper
1 teaspoon ground black pepper
1 tablespoon minced fresh ginger
1 teaspoon salt

Instructions for making Chicken Tikka Masala:

  1. In a bowl, combine all the marinade ingredients. Add the chicken pieces and mix well to coat. Cover and refrigerate for at least 1 hour or overnight for best flavor.
  2. Preheat your grill or broiler. Thread the marinated chicken onto skewers and grill or broil until cooked through and slightly charred, about 8-10 minutes per side.
  3. In a large skillet, heat vegetable oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
  4. Add the minced garlic and grated ginger to the skillet. Cook for another 2 minutes until fragrant.
  5. Stir in the ground cumin, ground coriander, paprika, turmeric, garam masala, and cayenne pepper. Cook the spices for 1-2 minutes to toast them and develop flavor.
  6. Add the diced tomatoes with their juices to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes break down and form a thick sauce.
  7. Pour in the heavy cream and stir to combine. Season with salt to taste.
  8. Add the grilled chicken tikka pieces to the sauce, stirring gently to coat the chicken evenly. Simmer for 5-10 minutes to allow the flavors to meld together.
  9. Garnish with chopped cilantro leaves before serving. Serve hot with steamed rice, naan bread, or roti.
